Brush Box - Lophostemon Confertus grows in North East New South Wales and coastal Queensland. A fruity honey with citrus tones like breakfast marmalade.

River Red Gum - Eucalyptus Camaldulensis grows along the banks of the Lachlan River in Central New South Wales. River Red Gum is a dense honey, clear golden in colour and has a mild and smooth flavour with eucalyptus finishing notes.
Tea Tree - Melaleuca Quinquenervia is widely spread in South Eastern Queensland. Well known for its medicinal benefits of antibacterial, antiseptic and anti-inflammatory properties, Tea Tree has a strong caramel flavour and aroma. Assists in relieving flu symptoms and boosting the immune system.
Yapunyah - Yapunyah Trees (Eucalyptus Ochrophloia) grow on the flood plains just south of Quilpie, in the "Channel Country" of Western Queensland. Yapunyah is a mild flavoured honey. Pale golden amber with a slight tannin finish to cut through the sweetness, it has a delicate aroma like grandma's lemon meringue pie.
Yellow Box - Harvested from the Australian Yellow Box trees Eucalyptus Melliodora growing on the western slopes of the Great Dividing Range. A light aromatic table honey, slow to crystallise with a mild delicate taste.
