HONEY VARIETALS -

Brush Box - Lophostemon Confertus grows in North East New South Wales and coastal Queensland. A fruity honey with citrus tones like breakfast marmalade.

Burdekin Coast - Between Townsville and Bowen in Far North Queensland lies the Burdekin Coast District. Pollination by honey bees is crucial to many crops in the Burdekin such as melons, pumpkins, squash and zucchini.  This unique honey tastes like rich banana cake infused with caramel flavours.

Gympie Gold - This honey is sourced from various hives located in the Gympie area. Light amber in colour having a delicate flavour with notes of pineapple, passionfruit and citrus.

Ironbark - A mild yet distinct honey from the blossoms of the Ironbark trees. The Ironbark is a family of eucalypt trees with a wide variety of leaf and flower sizes and colours, varying from deep green to silver. Ironbark is an amber coloured honey with a slight caramel flavour and is a great all rounder for both savoury and sweet dishes, baking and smoothies.

River Red Gum - Eucalyptus Camaldulensis grows along the banks of the Lachlan River in Central New South Wales. River Red Gum is a dense honey, clear golden in colour and has a mild and smooth flavour with eucalyptus finishing notes.

Tea Tree - Melaleuca Quinquenervia is widely spread in South Eastern Queensland. Well known for its medicinal benefits of antibacterial, antiseptic and anti-inflammatory properties, Tea Tree has a strong caramel flavour and aroma. Assists in relieving flu symptoms and boosting the immune system.

Yapunyah - Yapunyah Trees (Eucalyptus Ochrophloia) grow on the flood plains just south of Quilpie, in the "Channel Country" of Western Queensland.  Yapunyah is a mild flavoured honey. Pale golden amber with a slight tannin finish to cut through the sweetness, it has a delicate aroma like grandma's lemon meringue pie.

Yellow Box - Harvested from the Australian Yellow Box trees Eucalyptus Melliodora growing on the western slopes of the Great Dividing Range. A light aromatic table honey, slow to crystallise with a mild delicate taste.
